
Levantine paper-thin flatbread cooked on a convex domed metal griddle (saj). Used to scoop dips, wrap shawarma, hold man'oushe za'atar.
Bedouin tradition predating settled bakeries — the saj griddle is portable, fire-driven, and travels with nomads. Documented across modern Syria, Lebanon, Jordan and Palestine; in Beirut's Hamra district, street saj stands have operated continuously since the 1950s.
The saj griddle itself averages 60-80cm wide and is heated by wood, propane or gas underneath. At Beirut's Furn Saj al-Reef, a single baker turns out 600-800 sheets a day for the morning man'oushe trade. Bread is folded twice and bagged still steaming.
Pliable, often 50-65cm across (the thinner markook reaches over half a metre; the thicker shawarma saj is smaller), blistered with brown freckles, soft and stretchy when warm, slightly chewy when cool. Tastes faintly of toasted wheat and woodsmoke. Folds in quarters around grilled chicken and pickled turnips without splitting.
High-hydration dough (75%+) rested 2 hours, hand-stretched on a fabric cushion to under 1mm. The convex saj sits over wood or gas; the dome lets the cook slap the dough on, peel it off in 30 seconds. Curved surface gives the characteristic dome-shape blister pattern.
Variations
Lebanese khobz saj (slightly thicker, used for shawarma), Syrian markook (thinner still, the Bedouin original), Palestinian shrak (eaten with za'atar and oil), and the Druze version sold around Mount Carmel and the Galilee at roadside stands.
