Bavarian brezel, brought by German immigrants to Philadelphia in the 1850s. The Pennsylvania Dutch hard pretzel preceded; the soft form became Philly street food. Anneconrad 'Anne Beiler' opened Auntie Anne's in 1988 in a Pennsylvania farmers' market and made it mall-canon by the 2000s.

Philadelphia eats 12x the national per-capita pretzel rate. Federal Pretzel (since 1922) and Center City Pretzel Co. supply the street carts. The Pennsylvania Dutch hard pretzel was first stamped in Lititz in 1861 by Julius Sturgis. Auntie Anne's now has 1,800+ stores in 25 countries.

Glossy mahogany surface, snap of pretzel salt, soft tear-apart interior, faint alkaline tang. Eaten warm with yellow mustard (Philly) or cheese sauce (mall). Two main shapes: the loose loop or the rod.

Dip in 3-4% food-grade lye (NaOH) solution before baking — the high pH (~13) gelatinizes surface starch and accelerates Maillard browning at lower temperatures, giving the deep mahogany color and faint mineral bite. Baking soda is the home substitute but never matches.

Philly soft (loose, salty, mustard), Bavarian brezel (tight knot, thick belly, beer pairing), Auntie Anne's (mall-soft, butter-brushed, cinnamon-sugar sweet), pretzel rod (cigar-shape), pretzel bun (burger application popularized by Wendy's 2013).
