Slovakia's signature juniper spirit: a clear, gin-like spirit distilled from ripe juniper berries, dry and aromatic with piney, resinous warmth. Unlike gin, which flavours a neutral spirit, borovička draws its character straight from distilling the berries themselves. Several regional styles, such as Spišská and Liptovská borovička, hold EU Protected Geographical Indication status.

A juniper spirit in the gin family, distilled in Slovakia since around the 16th century and traditionally tied to the central region of Liptov, then part of the Habsburg monarchy. For centuries the wild juniper of the Carpathian forests has fed this spirit, and it remains one of the country's most emblematic drinks. Specific regional names, including Spišská, Liptovská and Trenčianska 'Juniperus', carry EU Protected Geographical Indication.

Cold and bracing, it hits with a clean juniper rush, all pine forest and crushed berries, edged with peppery heat. Drier than gin and faintly sweet on the finish, it warms the chest on the way down. A small glass is a sharp, herbal jolt of the Slovak mountains.

Unlike gin, the juniper berries themselves are fermented and then distilled, so distillation concentrates ethanol along with the volatile terpenes (like pinene) that carry the piney aroma into the spirit. Cutting heads and tails removes harsh methanol and heavy fusel oils, leaving a clean, aromatic heart.

    Gather and lightly crush ripe juniper berries to expose their oils.

    Watch out

    Crush the berries just enough to split the skins and free the oils — you want them cracked, not pulverized, or the mash turns bitter.

    Ferment the crushed berries with yeast, nutrients and warm water in a vat.

    Combine the fermented mash with water for distilling.

    Run the first distillation to separate alcohol from the wash.

    Perform a second distillation, cutting the heads and tails.

    Watch out

    On the second run, cut away the first sharp-smelling trickle and the weak thin tail — keep only the middle; that's where the clean piney aroma lives.

    Collect the aromatic juniper heart of the run.

    Watch out

    Judge the heart by nose and feel — it should smell cleanly resinous and feel smooth, not raw and solventy like the heads.
