Italy's pre-eminent hard cheese — a DOP product from Parma, Reggio Emilia, Modena and parts of Bologna and Mantova, made from raw partly-skimmed cow's milk cooked in copper cauldrons and aged a minimum of 12 months. Its granular, crystalline texture and concentrated umami have made it the most referenced cheese in Italian culinary history.
The cheese emerged from Benedictine and Cistercian monasteries in the Parma–Reggio Emilia area during the 12th–13th centuries. Four institutions are documented as early producers: the Benedictine abbeys of San Giovanni Evangelista (Parma) and San Prospero (Reggio Emilia), and the Cistercian abbeys of San Martino di Valserena and San Bernardo di Fontevivo (both in Parma province). Abundant springwater and salt from Salsomaggiore deposits made the region ideal for large-scale cheese production. By c. 1353, Boccaccio referenced it in the Decameron as 'a mountain of grated Parmigiano' over which pasta was made. The Consorzio was founded in 1934; DOP status was recognized under EU Regulation 1107/96. The production zone covers five provinces: Parma, Reggio Emilia, Modena, Bologna (west of the Reno River), and Mantova (south of the Po River).
A hard, dry, granular cheese that fractures into irregular chunks when prised with a special pointed knife; the first impression is dry and almost crystalline, quickly giving way to concentrated umami — savory, nutty, with faint dried-fruit sweetness — while white tyrosine crystals provide a subtle, pleasant grittiness; the finish is long, warm, and deeply savory.
Three sequential transformations produce Parmigiano Reggiano's character. First, lactic acid bacteria in the whey starter lower the milk's pH by producing lactic acid, creating optimal conditions for calf rennet to cleave κ-casein and cause casein micelles to aggregate into a firm gel network. Second, cooking the curd to 55°C (cottura) causes protein denaturation and syneresis — the curd granules expel whey, contract, and consolidate into the dense wheel structure under gravity. Third, during 12–36 months of aging, residual proteases continue hydrolyzing casein chains; free amino acids — especially tyrosine — accumulate and crystallize into the visible white grains. Concurrent lipolysis by lipases releases short-chain fatty acids (butyric, caproic, caprylic), which together with glutamate accumulation and Maillard-reaction products from the cooking phase build the cheese's complex, nutty, savory flavor.
Variations
Aging tiers: 12–17 months ('giovane' / young) — softer, milder, suitable for direct eating; 18–24 months ('vecchio' / aged) — firmer, more complex; 24–36+ months ('stravecchio' / extra-aged) — granular, intensely savory, with pronounced tyrosine crystals. The 'Vacca Rossa Reggiana' sub-line, from the native Reggiana Rossa breed, has a higher proportion of beta-casein A2, yielding richer, more complex flavor at extended aging; scarce production, hot-stamped with a distinct mark. Grana Padano is the related but distinct DOP cheese from a broader Po Valley zone with slightly less restrictive aging rules.
