Asab soos is Egyptian fresh sugar cane juice — green stalks pressed through a machine into a sweet, slightly grassy, ice-cold drink. Sold from street carts across Egypt.

Egypt is the world's largest sugar cane producer in the Mediterranean. Asab soos (sugar cane juice) is sold from specialized street carts with heavy-duty presses. The cane is pressed to order; the juice must be consumed within minutes before it ferments.

A glass of pale green, slightly cloudy, ice-cold liquid. The taste is intensely sweet but natural — like liquid sugar with a faint grassy, vegetal note. Refreshing beyond description on a hot day.

Sugar cane juice is 70-80% sucrose by dry weight. Its high sugar concentration provides instant energy. The chlorophyll (from the plant's green tissue) gives the characteristic pale green color and grassy flavor. The juice must be consumed fresh — natural enzymes begin breaking down the sucrose within hours.

Variations

Some add lime juice; the cane variety affects sweetness; some serve it over crushed ice.
