Buberts is a traditional Latvian semolina dessert, the cooked grain whipped airy with egg and served with berry sauce or milk. Light and nursery-gentle, it is the sweet of family gatherings and childhood.
Spoon up buberts — pale-yellow light-airy semolina pudding, fluffy almost soufflé-like, topped with dark berry compote bleeding into the cream. Bite: pillowy mousse-like with cream-vanilla sweetness, the egg-whites making it incredibly light despite the semolina, the berries' tart-sweet contrast. Different from any Western pudding — uniquely Latvian. With strong coffee, this is the Sunday-lunch closer.
Beating egg whites creates the airy texture distinct from other semolina puddings. Folding (not stirring) preserves the air. Berries balance richness with tang.
Variations
With cherry compote. With strawberry. With added cinnamon. With chocolate sauce. Without egg whites (denser). With more sugar.

Ingredients
Serves 6How it's made
9 steps · 25 min active + 20 min waiting
- 15 min
Heat 1 L whole milk + 100 g sugar + 1 tsp vanilla + 1/2 tsp salt in a heavy pot until just simmering.
- 213 min
Slowly whisk in 150 g fine semolina; cook 12 min, stirring constantly, until thick.
Watch outWhisk the semolina in slowly and stir without stopping — added too fast it lumps; it's ready when it's thick enough to hold a trail from the whisk.
- 311 min
Remove from heat; cool 10 min.
- 45 min
Beat 4 egg whites with 2 tbsp sugar to stiff peaks.
Watch outBeat the whites to stiff peaks — when you lift the whisk the peak stands straight and doesn't flop; this is what makes the pudding airy.
- 53 min
Beat 4 egg yolks with 30 g sugar until pale.
- 64 min
Whisk yolks into cooled semolina; fold in egg whites gently.
Watch outFold the whites in with a light lifting motion, don't stir — stirring knocks the air out and the pudding goes flat and dense.
- 732 min
Pour into a serving dish; chill 30 min.
- 83 min
Top with berry compote (e.g., bilberries cooked with sugar) or cherry syrup.
- 91 min
Serve cold.
