Buberts is a traditional Latvian semolina dessert, the cooked grain whipped airy with egg and served with berry sauce or milk. Light and nursery-gentle, it is the sweet of family gatherings and childhood.

Spoon up buberts — pale-yellow light-airy semolina pudding, fluffy almost soufflé-like, topped with dark berry compote bleeding into the cream. Bite: pillowy mousse-like with cream-vanilla sweetness, the egg-whites making it incredibly light despite the semolina, the berries' tart-sweet contrast.     Heat 1 L whole milk + 100 g sugar + 1 tsp vanilla + 1/2 tsp salt in a heavy pot until just simmering.

    Whisk the semolina in slowly and stir without stopping — added too fast it lumps; it's ready when it's thick enough to hold a trail from the whisk.

    Watch out

    Beat the whites to stiff peaks — when you lift the whisk the peak stands straight and doesn't flop; this is what makes the pudding airy.
