'Eskimo ice cream' — the Yup'ik and Iñupiat dessert of fat whipped to a fluffy cream and folded with wild berries and a little sugar. Traditionally seal or reindeer fat (here butter); light, airy, and tart-sweet with blueberries and cranberries.

Akutaq — 'Eskimo ice cream' — is a traditional Yup'ik and Inupiat dish whipping fat (seal, reindeer or, today, shortening) with wild berries into an airy, frozen treat. Made for celebrations, hunts and funerals, it is survival food turned festive.

Spoon up akutaq and it's cool, airy, and surprisingly light, the whipped fat melting on the tongue like a frosting, studded with bursts of tart wild berry. Rich yet fluffy, sweet then sharp from the cranberries and blueberries, with a texture unlike anything else. The celebration treat of the Alaska Native table.

Whipping the fat with air (and a little water) creates a light, frosting-like emulsion that stays soft even when cold — the original 'ice cream' before dairy and freezers. Wild berries provide the tartness and bursts of flavor that cut the richness of the fat.

    Soften 150 g butter (or traditional rendered fat) to room temperature.

    Whip the fat with a little sugar until pale and fluffy.

    Watch out

    Whip until the fat turns visibly paler and holds soft peaks — that colour change means enough air is in.

    Gradually whip in a few spoons of water or oil to lighten it further.

    Gently fold in 200 g blueberries and cranberries.

    Fold in cold berries so they chill the fat and it starts to firm as you work.
