The pavlova — a meringue cake claimed by both Australia and New Zealand — was named for the ballerina Anna Pavlova after her 1926 antipodean tour. This native version folds in wattleseed, finger lime and macadamia, rooting the colonial dessert in tens of thousands of years of bush flavour.

Crack the pavlova's crisp shell and it gives to a soft marshmallow centre, the wattleseed lending a roasted coffee-chocolate warmth, the cream cool, the finger lime popping sharp and citrus over the macadamia crunch. Bite: light, sweet, and crisp-then-melting, the native flavours making the familiar pavlova taste of Australia itself. A showpiece dessert.

Sugar whisked into egg whites traps air and stabilizes the foam; a low bake dries the shell crisp while the inside stays as soft marshmallow, and acid (vinegar) keeps the centre from collapsing. Wattleseed adds a roasted coffee-chocolate note, and finger lime's acid cuts the sweet cream.

    The meringue is ready when it holds a firm upright peak and looks satiny — rub a little between your fingers and it should feel smooth, not gritty.
