The pavlova — a meringue cake claimed by both Australia and New Zealand — was named for the ballerina Anna Pavlova after her 1926 antipodean tour. This native version folds in wattleseed, finger lime and macadamia, rooting the colonial dessert in tens of thousands of years of bush flavour.
Crack the pavlova's crisp shell and it gives to a soft marshmallow centre, the wattleseed lending a roasted coffee-chocolate warmth, the cream cool, the finger lime popping sharp and citrus over the macadamia crunch.
