Roti John is a uniquely Malaysian mamak street food of the 1960s, named for an unnamed Westerner who allegedly asked for bread and egg. Indian-Muslim hawkers spread a spiced egg-and-minced-meat (or sardine) omelette mixture onto a halved baguette or long bun, then pan-fry it until the filling sets crisp. It is a night-market and Ramadan bazaar staple, sliced into strips and served with chili sauce and mayonnaise, and the spiced halal omelette-on-bread combo blends Malay, Indian and Western bread traditions.
A crisp, savoury, egg-and-meat layer fused to the bread, the inside of the loaf still soft, a sweet chili edge from the sauce. Eaten in strips, it is hearty, spiced and unmistakably street.
The egg mixture is beaten with minced meat (or sardine), onion, chili and a spiced seasoning, then poured over the cut face of a halved baguette. The bread-and-egg slab is pan-fried egg-side-down first so the egg sets and browns into a crust fused to the bread, then flipped to toast the bread side. The fusion of egg crust to bread is the defining technique; the two become one piece.
Variations
A sardine version uses canned sardines instead of meat. A mutton version is richer.

Halve 1 baguette lengthwise; set aside.

Beat 4 eggs with 150g minced beef, 1 chopped onion, 1 chopped red chili, 1 tbsp Worcestershire sauce, 1 tsp salt and a pinch of pepper.

Heat 3 tbsp oil in a pan; pour half the egg mixture in a slab the size of the baguette.

Press the cut face of the baguette onto the egg mixture, so the egg adheres to the bread.
