Quanta firfir is Ethiopian beef jerky stew — sun-dried beef reconstituted and cooked with berbere, onion, and injera. A dish born from preservation necessity.

Quanta firfir uses quant'a (sun-dried beef jerky) — a preservation method essential in Ethiopia's hot, dry lowlands before refrigeration. The dried beef is reconstituted in a spicy berbere stew; torn pieces of injera are stirred in (firfir means 'broken up'), absorbing the sauce.

A thick, dark red stew with chewy pieces of reconstituted beef jerky and broken pieces of injera throughout. The beef is tougher than fresh but more intensely flavored; the injera has soaked up the berbere sauce completely. Spicy, savory, and deeply satisfying.

Sun-drying concentrates the beef's glutamate (umami) by removing water. The reconstitution in acidic berbere broth rehydrates the fibers while the acid helps break down the tough, dried connective tissue. The injera acts as a sponge, absorbing the sauce's flavors.

Variations

Some add hard-boiled eggs; the drying time varies; some use lamb jerky instead.

    Fry the berbere in the spiced butter until it darkens and turns fragrant and the fat runs red — that bloomed paste is the flavor base.

    Simmer until the rehydrated beef pulls apart easily — the dried fibers need the full hour in acidic broth to go tender.
