Mupunga une dovi (Shona for 'rice with peanut butter') is a beloved comfort dish in Zimbabwe, where rice (mupunga) is the second starch after sadza. The dish is simplicity itself — cooked rice folded with peanut butter — but it captures the Zimbabwean love for the peanut-dovi flavor that runs through the cuisine. It is the dish a mother makes when her children come home from school hungry, eaten warm from the pot, often with a little sugar sprinkled on top.

The peanut butter is stirred in off the heat, while the rice is still hot enough to melt it but not so hot that it fries. Natural (unsweetened) peanut butter is essential — sweetened commercial versions are too sugary. A little sugar can be added at the table.

Variations

    Rinse 300 g white rice in cold water until the water runs clear.

    Put in a pot with 500 ml water and a pinch of salt; bring to a boil.

    Cover; reduce to lowest heat; cook 15 minutes without lifting the lid.

    Watch out

    Keep the lid on the whole 15 minutes — every peek lets steam escape and cooks the rice unevenly; it's done when the water's fully absorbed and little steam holes pock the surface.

    Off the heat; let stand covered 5 minutes; fluff with a fork.

    Fold in 6 tbsp natural peanut butter while the rice is still hot.

    Watch out

    Fold the peanut butter in while the rice is still hot — the heat melts it into glossy ribbons; once the rice cools it just clumps and won't coat evenly.
