Caribbean rum cocktail built on a 1-2-3-4 rhyme: one of sour, two of sweet, three of strong, four of weak.

The 1-2-3-4 ratio is sung in a Bajan rhyme — "one of sour, two of sweet, three of strong, four of weak, a touch of spice to make it nice" — and is carved on the wall at the Mount Gay distillery in Barbados. Punch predates the daiquiri; British sailors carried the format from India to the Caribbean in the 17th century.

Bajan tradition adds a dash of Angostura and grates fresh nutmeg over the top — both anchored in the 19th-century plantation pantry. Mount Gay, founded 1703, is the oldest commercial rum distillery on record.

Deep amber to pink depending on the rum and grenadine. Lime tang up front, brown-sugar syrup in the middle, rum heat at the back, fruit juice (orange or pineapple) carrying it. Grated nutmeg on top, served over crushed ice.

The 1-2-3-4 ratio is the load-bearing rule: one part lime, two parts cane syrup or grenadine, three parts dark rum, four parts juice. Off-ratio punch goes thin or cloying. Aged dark rum (Mount Gay XO, Appleton 12) gives the molasses depth juice cannot fake.

Variations

Bajan Rum Punch uses Mount Gay and lime; Planter's Punch (Jamaica, Myers's dark rum) leans heavier on bitters; Ti' Punch (Martinique and Guadeloupe) drops juice entirely — rhum agricole, lime disc, cane syrup, no ice.

    Combine 60 ml lime juice (1 sour), 120 ml simple syrup (2 sweet) in a pitcher.

    Watch out

    Squeeze the lime fresh and keep the 1-2-3-4 ratio honest — bottled juice or a heavy pour goes either thin or cloying fast.

    Add 180 ml dark Caribbean rum (3 strong) and 240 ml water or fruit juice (4 weak).

    Add grated nutmeg and 4–6 dashes Angostura bitters; stir.

    Watch out

    Nutmeg should be grated fresh right over the top — a whisper of it, or the punch tastes soapy and dusty.
