Layered flaky flatbread — atta dough rolled, painted with ghee, folded, re-rolled, pan-cooked. Plain or stuffed with potato, radish, cauliflower.

Punjabi farmer breakfast — high-calorie, eaten with butter and lassi before fieldwork. The lamination technique is documented in Manasollasa, 1130 CE Karnataka, called puran poli (puranapoli/purana), a sweet stuffed flatbread historians link to the paratha lineage. Modern aloo paratha is a 1947 Partition food — Punjabi refugees in Delhi formalized the stuffed version.

The Punjabi practice: stuffed parathas use boiled-then-grated potato, never mashed wet — water leaks out and tears the dough. A correctly made aloo paratha holds together when picked up by one corner. Most fail this test.

Round to triangular depending on fold, 20cm, golden brown with darker char freckles. Crisp shattering layers on outside, soft and ghee-rich inside. Stuffed versions split open to reveal mashed-potato-and-cumin filling. Eaten with white butter, mango pickle, plain yogurt.

Lamination by ghee-and-fold builds 8-16 layers. Unlike croissant, the fat is brushed not blocked — semi-solid ghee at room temp coats the surface, fold traps it, the next roll squashes the layers thin. Pan at 200°C with ghee on top: each layer separates as moisture flashes to steam.

Variations

Aloo paratha (Punjab) — boiled potato, cumin, green chili. Mooli paratha (Punjab winter) — grated salted-and-squeezed daikon. Lachha paratha is the rope-coiled multi-layer version, not stuffed, served in tandoori restaurants. Kerala parotta is unrelated — that's all-purpose flour, more like Singapore roti prata.

    Mix 500 g atta flour + 5 g salt + 280 ml warm water + 30 ml ghee into soft dough.

    Watch out

    Knead to a soft dough that just clears your hand — dry and stiff and the layers tear instead of stretching thin.

    Divide into 80 g balls; roll flat, brush with ghee, fold layers, roll out again.

    Watch out

    Brush the ghee thin and even before folding, then roll gently — too heavy a hand squeezes the fat out and the layers merge instead of separating.

    Cook on hot tawa 1 min per side, pressing edges; brush ghee on top.

    Watch out

    The paratha's done when it puffs and blisters with brown flecks and the layers visibly flake apart; press the edges so they cook through too.
