The tandoor, a clay oven, defines it: tandoori chicken (yogurt-and-spice-marinated, charred), naan, and roti all come out of it. Butter chicken, properly murgh makhani, simmers tandoor-cooked chicken in a tomato gravy enriched with butter and cream. Dal makhani is black lentils cooked overnight with butter and cream until silky, and sarson da saag, a slow-cooked mustard-greens dish eaten with cornmeal flatbread (makki di roti), is the rustic winter classic. The cooking is generous with ghee, cream, onions, ginger, and garlic, finished with a tadka, hot spiced oil poured over at the end.
