View page →Parsi cuisine belongs to the Zoroastrian community who fled Persia for the west coast of India over a thousand years ago and settled mainly in Gujarat and Mumbai, blending their Iranian heritage with Gujarati ingredients into a distinctive sweet-and-sour, egg-loving kitchen. The signature is dhansak, mutton or chicken braised into a thick purée of mixed lentils and soft vegetables, traditionally a Sunday dish served over caramelized brown rice. Sali boti is a sweet-sour mutton curry crowned with crisp shoestring potatoes (sali), and patra ni machhi — fish coated in green coconut chutney and steamed in a banana leaf — is the auspicious dish of weddings and navjote initiation feasts. Eggs run through everything: akuri, the soft spiced scramble of Mumbai's Irani cafés, is the beloved breakfast.
