View page →Karnataka cuisine, from India's southwestern state, runs along two main lines: the gentle vegetarian cooking of the Udupi temple tradition inland, and the bolder, coconut-and-seafood Mangalorean style of the coast. The everyday classic is bisi bele bath — Kannada for 'hot lentil rice' — a one-pot mix of rice, toor dal, vegetables and tamarind bound with a roasted-spice-and-coconut masala. Dosa reaches its peak here: the Mysore masala dosa is smeared inside with a fiery red garlic chutney before the potato filling goes in, while neer dosa from the Tulu coast is a soft, unfermented lacy crepe whose name means 'water,' after its thin batter. The coast brings Mangalorean ghee roast, chicken or prawns cooked down in spiced ghee until dark and glossy, and ragi mudde — steamed finger-millet balls — anchors rural meals. For sweets, the dense ghee-and-gram-flour fudge Mysore pak, born in the Mysore palace kitchens, is the regional icon.
