Vada pav is Mumbai's own: a spiced mashed-potato fritter in a soft bun (pav) with chutneys, a fried-carb sandwich eaten on the go. Pav bhaji is a mashed mixed-vegetable curry griddled with butter and served with the same buns, and misal pav layers a spicy sprouted-bean curry under crunchy fried farsan.
