Traditions

The griddle is a near-universal flat-plate tradition. In India the cast-iron tava is the daily bread stone: wheat chapati and puffing phulka in the north, and in the south a fermented rice-and-urad-dal batter spread paper-thin into the great dosa, or poured thick and dressed as uttapam — the heart of the tiffin table. Across the Atlantic, Mesoamerica's clay and iron comal has toasted corn tortillas, chiles and cacao for millennia. On the Spanish plancha, seafood and vegetables sear in their own juices, while Brittany's billig turns buckwheat galettes and crêpes. Japan's teppan brings the same flat steel to the table for okonomiyaki and yakisoba.

How It Works

A flat metal plate — cast iron, carbon steel, or seasoned wrought iron — is held at roughly 180–250°C and transfers energy by direct solid-to-solid conduction, the fastest of the dry-heat modes because food and metal touch with no air or liquid gap. Where dough meets the plate, surface water flashes off and the exposed starch and protein brown by Maillard reaction above ~150°C, printing the characteristic freckled spots. At the same instant the interior moisture turns to steam and expands nearly 1,600-fold; trapped between two set gluten faces it inflates a thin bread into a balloon — the phulka's puff. A fermented dosa batter behaves inversely: its thin film loses water only from the contact side, so the starch gelatinizes and then dextrinizes into a lacy, crisp golden underside while the top stays soft and steamed. Nothing is submerged, so there is no frying and no leaching — only conduction, dehydration, and surface browning.

Preheat the dry plate until a flick of water skitters and vanishes in a second or two — too cool and the bread turns leathery, too hot and it scorches before it cooks through. For flatbreads: roll to even thickness, cook the first side until pale bubbles rise, flip once, then for phulka lift it onto an open flame or press the edges so trapped steam balloons it. For dosa: pour a ladle at the centre and spiral it thin with the ladle's back, run a ring of oil or ghee at the rim to crisp the lace, and lift only when the underside releases cleanly. Season carbon steel or cast iron and never scour it back to bare metal — a built-up patina is a near-nonstick surface. Failure modes: an under-heated plate steams the bread grey and tough; batter poured on too-hot metal seizes and tears before it can spread; skipping the dry preheat leaves spices raw and flatbreads pale.

Through Time

The griddle is among the oldest cooking tools. Neolithic cooks baked grain paste on fire-heated flat stones, and fired-clay griddles are found across Mesoamerica — the comal — and South Asia — the tava — through the first millennium BCE. The dosa is described in Tamil literature more than a thousand years ago, its early references traced by the food historian K. T. Achaya in *Indian Food: A Historical Companion* (1994). In the modern kitchen the seasoned cast-iron or carbon-steel plate is the everyday tool, and writers from Julie Sahni (*Classic Indian Cooking*, 1980) to Meera Sodha and Chetna Makan have codified tava breads for the English canon.

Grilling applies the same fierce dry heat but through a grate by radiant infrared, so flame and smoke reach the food; the griddle's solid plate never lets them.
