
Fermented rye-bread drink — Ukrainian style runs darker and less malt-sweet than Russian, with more rye character. Summer thirst-killer.
First documented in the Primary Chronicle of Kyivan Rus' under the year 988, when Prince Volodymyr ordered food, honey and kvas distributed to mark the baptism of Rus' — older than beer in the Slavic record. Sold by kvas-makers (kvasnyky) on Kyiv streets from medieval times through the 1970s, when state-issued yellow barrels (zhovta bochka) appeared on every corner.
Ukrainian linguist Ivan Ohiyenko traced the word kvas to Proto-Slavic kvasъ meaning sour. The 1986 Chernobyl-era state monopoly briefly killed home-brewing; revival began in early 1990s through Lviv's Kvasolyariya guild.
Cloudy ochre-brown, sharp rye tang up front, slight sweetness from raisins or honey, mild fizz from natural yeast. Alcohol content under 1.5 percent — children drink it. Served straight from the cellar, cold, in a heavy glass.
Rye bread is toasted dark — almost burnt — to caramelize the crust before steeping. The starter is sourdough discard or pre-fermented kvas dregs (huschcha). Two-stage ferment: 24 hours warm for primary, 48 hours cold for carbonation.
Variations
Beet kvas (kvas buryakovyy) uses fermented red beet instead of bread and is the base for cold borshch. Lviv style adds horseradish root; Poltava style adds wild pear. Carpathian villages still serve oak-cask-aged kvas in summer.

Cube 500 g dark rye bread; toast in 180 °C oven until very dry, 25 min.
Watch outToast the rye cubes dark, right to the edge of burnt — that near-black crust is where the deep color and roasty flavor of the kvas come from.

Place toasted bread in jar; pour 4 L just-boiled water over; let steep 8 hr.

Strain; add 200 g sugar + 7 g yeast + handful raisins; ferment 24 hr in warm spot.
Watch outIn a warm spot it should froth and smell yeasty-sour within a day — a lively foam means the ferment took; no bubbles, move it somewhere warmer.
