Akara is the pan-West African black-eyed pea fritter shared across the region. The Gambian version is eaten as 'akara sandwich' — fritters stuffed into French baguettes with hot sauce.

    Soak 300 g black-eyed peas 1-2 hours; rub off skins.

    Beat the batter a good 5-plus minutes until it's visibly lighter and fluffy — that whipped-in air is what makes the akara puff instead of turning dense.

    Get the oil to a steady medium-hot before dropping the batter — too cool and the akara drinks oil and goes greasy instead of crisping.

    Drop in spoonfuls and fry until golden and puffed — they should float up and swell, not sink and sit flat.
