
Rēwena bread uses a 'rēwena bug' — a sourdough starter made by fermenting boiled potatoes with flour. Pre-yeast Māori bread tradition adapted from European settler bread-making, distinctly Māori with the potato starter.
Cut a thick slice of rēwena bread — dense, slightly off-white crumb, brown crust, faintly sour aroma. Bite: dense and chewy, with a pleasant tang from the potato fermentation, slightly sweet from the potato starches. The crust is crackly. With butter melting in, this is Māori bread that predates yeast — connecting modern eating to the early colonial-Māori encounter when wheat first arrived.
Wild lactic-acid and yeast bacteria from the potato ferment the starch into the bug. Slow fermentation develops complex tang. Long final rise is needed because the starter is less powerful than commercial yeast.
