Where it comes from
The baleada is the national street-and-home food of Honduras, built on a soft wheat-flour tortilla (unusual in corn-dominant Central America). The simple 'sencilla' is beans, crema, and cheese; everything else is an add-on.
On the plate
Fold open a baleada and the soft, slightly chewy wheat tortilla cradles a thick smear of dark refried beans, ribbons of tangy crema, and salty crumbles of queso fresco. Bite: warm and comforting, the beans earthy and rich, the crema sour and cooling, the cheese salty — pillowy and satisfying. With a scrambled egg or avocado tucked in, it is breakfast, lunch, and late-night Honduras in one fold.
How it works
A soft wheat-flour tortilla with a little fat and baking powder stays pliable and foldable rather than crisp. Refrying the beans concentrates them into a thick, spreadable paste that won't soak through; the cool crema and salty cheese balance the rich beans.

Make a dough from 300 g flour, 1 tbsp oil, 1/2 tsp salt, 1/2 tsp baking powder, and ~150 ml warm water; knead and rest 15 min.

Fry 1 chopped onion in oil; add 400 g cooked red beans and mash to a smooth refried paste; season.
