Where it comes from

The baleada is the national street-and-home food of Honduras, built on a soft wheat-flour tortilla (unusual in corn-dominant Central America). The simple 'sencilla' is beans, crema, and cheese; everything else is an add-on.

Fold open a baleada and the soft, slightly chewy wheat tortilla cradles a thick smear of dark refried beans, ribbons of tangy crema, and salty crumbles of queso fresco. How it works

A soft wheat-flour tortilla with a little fat and baking powder stays pliable and foldable rather than crisp. Refrying the beans concentrates them into a thick, spreadable paste that won't soak through; the cool crema and salty cheese balance the rich beans.
