Centolla, the southern king crab of Tierra del Fuego and the Beagle Channel, is the prized delicacy of the far south — sweet, snowy meat from the coldest waters. It is steamed and served simply, the cold sea its only seasoning.

Lift a forkful of centolla and the meat is sweet, snowy, and tender, lightly slicked with olive oil and brightened with lemon, the onion adding a gentle bite. Bite: delicate and clean, intensely sweet from the cold southern seas, almost no need for adornment. The luxurious cold-water prize of Tierra del Fuego, eaten simply so the crab leads.

Like all cold-water king crab, the centolla grows slowly in frigid seas and is intensely sweet; a brief boil sets the meat without toughening it. A minimal dressing of oil, lemon, and onion enriches and brightens without masking the crab's natural sweetness — the Patagonian way with seafood.

    Bring a large pot of well-salted water to a boil.

    Cook the live or whole centolla 12-15 min until bright red.

    Watch out

    The shell shifting to an even bright red is the doneness signal — start counting from a full boil.

    Cool, then crack the legs and body and pick out the meat.

    Dress lightly with olive oil, lemon juice, and very finely chopped onion.
