
Cordero al palo — a whole lamb splayed on an iron cross and roasted slowly over coals — is the iconic Patagonian asado of southern Argentina and Chile. It is an all-day, open-air ritual, the lamb crisping over a low wind-sheltered fire.
Carve a piece off the cross and the lamb has crackling, blistered skin over meltingly tender, smoky meat, perfumed by the hardwood coals and the open steppe air. Bite: rich, juicy, and deeply smoky, the slow fire rendering the fat and crisping the skin, the chimichurri sharp and herby against it. The grand communal feast of Patagonia, eaten outdoors with the wind.
Roasting the whole lamb upright beside (not over) the coals cooks it by steady radiant heat for hours, rendering fat slowly so the meat turns silky-tender while the skin crisps — the asador adjusts distance and angle to the wind to control the heat. The salmuera baste seasons and keeps the surface moist.
