Hakkebøf med Bløde Løg

Easy·15 min

A beloved Danish weeknight classic: thick, juicy pan-fried beef patties smothered in a mountain of slow-cooked sweet onions and a glossy brown gravy. Served with boiled potatoes and pickles, it is the definition of cosy Danish 'hverdagsmad' (everyday food).

A Danish home-cooking staple dating to the late 19th century, when meat was hand-chopped on the country's many cattle farms; the version with soft caramelized onions ('bløde løg') and brown sauce is the canonical form.

The patty is dense and savoury with a deeply browned crust, giving way to a juicy interior. The onions melt into silky sweetness that plays against the rich, salty gravy, while a sharp pickled beet on the side cuts cleanly through the fat.

Long, low-heat cooking of onions converts their pungent sulphur compounds and starches into sweet caramelized sugars (Maillard and caramelization), while a flour roux thickens the pan drippings into a glossy, emulsified gravy.

Variations

Topped with a fried egg ('engelsk bøf' style), made with a mix of beef and pork, or served with a cream-based mushroom sauce instead of brown gravy.

How it's made

8 steps · 15 min

  1. 1
    22 min

Peel and thinly slice 4 large onions; cook gently in butter over low heat for about 20 minutes until soft, sweet and golden, then set aside.

    Watch out

Keep the onions on low a full 20 minutes until soft, golden and sweet — rush them on high and they brown bitter instead of turning sweet.

  2. 2
    5 min

Mix 500g ground beef with salt and pepper and shape into 4 thick, oval patties.

  3. 3
    8 min

Heat butter in a frying pan over medium-high heat and fry the patties about 3-4 minutes per side until well browned but still juicy.

    Watch out

Get a deep brown crust before you flip — the patty should sizzle hard and release on its own; poke it too early and it tears.

  4. 4
    2 min

Remove patties and keep warm; lower the heat under the pan.

  5. 5
    4 min

Sprinkle 2 tbsp flour into the pan drippings and whisk into a roux, then gradually whisk in beef stock to make a smooth brown gravy.

    Watch out

Cook the flour in the drippings a minute until it smells nutty, then pour the stock in slowly while whisking — dump it fast and the gravy goes lumpy.

  6. 6
    4 min

Simmer the gravy a few minutes, season with salt, pepper and a splash of cream or kitchen bouquet for colour.

  7. 7
    2 min

Return the soft onions to warm through and spoon generously over the patties.

  8. 8
    3 min

Serve hot with boiled potatoes, the brown gravy, and pickled beetroot or gherkins on the side.
