A Danish home-cooking staple dating to the late 19th century, when meat was hand-chopped on the country's many cattle farms; the version with soft caramelized onions ('bløde løg') and brown sauce is the canonical form.
The patty is dense and savoury with a deeply browned crust, giving way to a juicy interior. The onions melt into silky sweetness that plays against the rich, salty gravy, while a sharp pickled beet on the side cuts cleanly through the fat.
Long, low-heat cooking of onions converts their pungent sulphur compounds and starches into sweet caramelized sugars (Maillard and caramelization), while a flour roux thickens the pan drippings into a glossy, emulsified gravy.
