Despite the name 'apple cake', this old-fashioned Danish dessert is really a trifle: cool vanilla apple compote layered with buttery toasted breadcrumbs and crowned with billowing whipped cream. It is rustic, nostalgic and effortlessly elegant.

A classic old-fashioned Danish dessert ('gammeldags' means old-fashioned), it is not baked despite the name: it emerged in the 19th century as a simple, oven-free pudding layered like a trifle from stewed vanilla apple, butter-and-sugar-toasted breadcrumbs and whipped cream, most often finished with dabs of redcurrant jelly. Many families keep their own version.

Spoon through it and you hit cool, soft apple tasting brightly of vanilla, then a layer of sweet, crunchy, almost caramelized crumbs. The cloud of unsweetened cream pulls it all together, and the tart jelly is a jewel-bright counterpoint.

Toasting breadcrumbs in butter and sugar caramelizes them into crisp, flavourful clusters that contrast the soft compote, while keeping every layer cold preserves the textural distinction between crunch, fruit and cream.

    Peel, core and chop about 1kg tart apples, then cook with sugar, a splash of water and a vanilla pod until soft.
