
Denmark's dense, dark sourdough rye loaf, packed with whole rye kernels and seeds. Not sweet and intensely satisfying, it is the daily foundation of Danish life and the essential base for open-faced smørrebrød.
A very common Danish rye bread that was the major staple of the population until potatoes spread in the late 19th century; traditionally made over 2-3 days with a sourdough starter.
The crumb is moist, dense and chewy, studded with cracked grains and crunchy seeds. The flavour is deep and tangy from the sourdough, faintly malty and never sweet, with a sturdy character that holds up to the boldest toppings.
Wild lactic-acid bacteria and yeast in the sourdough produce acids that develop flavour and help structure rye's low-gluten dough, while long soaking softens the whole grains so the dense loaf stays moist for days.
Variations
Made plain ('old-fashioned' all-flour style), loaded with extra seeds and nuts, or with a touch of dark beer or malt syrup for colour and depth.

The night before, mix active rye sourdough starter with rye flour and water to form a loose pre-ferment and leave at room temperature overnight.
Watch outThe pre-ferment is ready when it's bubbly, puffed, and smells tangy-sour — a flat, lifeless mix means the starter wasn't active enough.

Soak cracked rye kernels and a mix of seeds (sunflower, linseed, pumpkin) in water overnight alongside.

Next day, combine the bubbly starter, the soaked grains and seeds, more rye flour, water and salt into a thick, sticky dough.

Reserve a cup of dough in the fridge to use as the starter for your next loaf.

Spoon the dough into a greased loaf tin, smooth the top with a wet spoon, and let it proof for 2-4 hours until slightly risen.
Watch outProof only until the top just domes and shows a few surface bubbles — dense rye barely rises, so don't wait for it to double or it'll collapse in the oven.

Bake in a preheated oven at around 180°C for about 1.5 to 2 hours until deeply browned and hollow-sounding.
Watch outIt's done when the crust is deep dark-brown and the loaf sounds hollow when you knock the bottom — pale or dull-thudding means the dense center is still wet.

Turn out and cool completely on a rack before slicing, ideally wrapping and resting it a day.
Watch outResist slicing warm — cut too soon and the moist crumb gums up the knife; a full day's rest firms it for clean thin slices.
