The frita appeared on Havana's street corners in the 1920s and 30s, sold from carts by 'friteros' as cheap, satisfying fast food. A blend of beef and Spanish chorizo seasoned with smoky paprika set it apart from the American burger, and waves of Cuban exiles later carried it to Miami, where it became a nostalgic icon.

The patty is juicy and faintly smoky, with chorizo lending a paprika-red warmth and gentle spice. The real magic is the contrast: crunchy shoestring potatoes and sharp raw onion against the soft bun and savory beef.
