Whole eel brined and hot-smoked over wood until the flesh turns golden, glossy and meltingly rich. A prized Dutch delicacy sold at fish stalls, eaten on its own or draped over bread as a luxurious starter.

Smoking eel has a long history in the watery Netherlands, where the fish were once abundant in the rivers, lakes and the former Zuiderzee. Around the IJsselmeer and in old fishing villages it was a staple, but as eel populations declined it became a treasured and pricey delicacy, still sold from the haringhuis stalls that dot Dutch towns.

The flesh is silky, fatty and dense, flaking into rich golden curds that coat the mouth like the finest oily fish. The wood smoke is deep but clean, never acrid, balancing the eel's natural richness. A squeeze of lemon and plain bread are all it needs to feel indulgent.

Brining seasons the eel and firms the flesh by drawing out moisture, while air-drying forms a tacky pellicle that the smoke can adhere to. Hot-smoking then cooks the fish and renders its abundant fat, basting the meat from within and producing the glossy skin and supple texture.
