Method developed in mid-1970s France by Pralus and Troisgros for foie gras; Bruno Goussault systematized temperature curves at the Centre de Recherche et d'Études pour l'Alimentation, and the technique entered modernist kitchens in the 2000s.
How It Works
Vacuum-sealed protein sits in a water bath held within ±0.1°C of target. Because water cannot exceed bath temperature, the protein asymptotically approaches it — overshoot becomes physically impossible. Myosin denatures at 50°C, actin at 66°C; collagen melts to gelatin from 60°C given enough time. Held below actin threshold, even tough cuts soften without drying.

the craftImmersion circulator (Anova, Joule, PolyScience) + chamber vacuum or zip-bag water-displacement. Steak 54°C × 1-4 hr; pork shoulder 74°C × 24 hr for sliceable; tough cut + 65°C × 48 hr = collagen-resolved while pink. Always finish with a sear — bag prevents Maillard during cook. Food-safety pasteurization tables (Baldwin 2010) by thickness and temperature are non-negotiable. Failure modes: pasteurization-time short of FDA guidance for thick poultry; unrendered fat at low temps tastes waxy.
