Chuko is a Gurage specialty — roasted barley flour mixed with spiced butter and honey, shaped into balls. A dense, calorie-rich energy food for travelers.

Chuko is from the Gurage people of central Ethiopia. It was designed as a portable, non-perishable food for long journeys. The roasted barley flour provides carbohydrates; the spiced butter provides fat and flavor; the honey provides sweetness and additional preservation. The combination is nutritionally complete for short-term sustenance.

A dense, dark, oily ball of grain and butter. The flavor is nutty (roasted barley), warm (spiced butter), and sweet (honey). The texture is fudgy — you can bite it but it takes effort. One ball is a meal.

Roasting the barley flour gelatinizes its starches (making them digestible) and develops Maillard flavors. The spiced butter's fat provides caloric density and carries fat-soluble vitamins. Honey's high sugar content (>80%) inhibits microbial growth, extending shelf life to months.

Variations
