
Black salt, roasted cumin, mint, tamarind, ginger, asafoetida shaken with ice water. North Indian summer digestive — savoury, sour, salty, never sweet.
Ayurvedic in lineage — jal (water) + jeera (cumin) — rooted in classical Ayurvedic digestive lore (recorded in compendia such as the 16th-century Bhavaprakasha) as a cooling pre-meal pachak. Modern packet version commercialised by Everest Spices and Catch in the 1980s, but still made fresh at Old Delhi's Chawri Bazaar carts.
Old Delhi's Sitaram Diwan Chand at Paharganj has served jaljeera since 1950 from a clay matka with a wooden ladle, free with their stuffed paratha plate. The Catch packet sold in NRI Indian groceries is the closest store-bought equivalent but uses citric acid instead of tamarind.
Murky brown-green from mint and tamarind, served in 200ml steel cups with crushed ice and a boondi (chickpea-flour pearl) scatter on top. Black salt's sulphur hits first, cumin smoke, sour tamarind, mint cool. Aggressive, not refreshing in the lemonade sense.
Black salt (kala namak) is non-negotiable — its sulphur compounds give the egg-yolk-and-mineral funk that defines jaljeera; regular salt ruins it. Tamarind pulp must be soaked in warm water 20 minutes and strained through cloth, never blended.

Delhi style (mint-heavy, boondi garnish); Lucknowi (rose petal added); Rajasthani (ground bhuna jeera doubled); Banarasi (paan masala stirred in); commercial Catch/Everest packet (citric acid replaces tamarind).

Soak 30 g tamarind in 500 ml hot water 15 min; strain.
Watch outRub the softened tamarind through the strainer and keep only the smooth pulp-water; never blend it, or the seeds and skin turn it bitter.

Mix tamarind water with 1 tsp roasted cumin + 1 tsp black salt + 1 tsp ginger + 1/2 tsp chili + chopped mint.
Watch outBlack salt is the whole point here — that sulphur tang; regular salt leaves it flat and wrong.
