Apulian large-crumb wheat sourdough — durum semola, naturally leavened, 1-2 kg rounds, thick floured crust.
Wheat-belt southern Italy — Puglia is the country's largest durum producer. The bread was the staple of the Tavoliere plain since at least the 1500s, baked once a week in communal forni a legna. Most Pugliese loaves still come unsliced from the wood oven, weighed and priced by the kilo.
The classic shape is 1 kg or 2 kg cappello del prete (priest's hat), with a folded-over top scored to release steam. Forno Santa Chiara in Altamura still bakes Pugliese loaves in a 1423 stone oven, the oldest working bread oven in Italy.
Tan-gold crust with floured top, irregular open crumb tinged yellow from the durum. Wheaty-sweet first, faint sour at swallow, that grit-free durum chew. The crust shatters but the crumb is springy, not chewy.
Semola di grano duro rimacinata (twice-milled durum) absorbs more water than soft wheat, holding 75% hydration without slack. A 24h biga and 3-4h bulk bring out the carotenoid yellow and the nutty toast note that soft-wheat country loaves lack.
