Lívance (Czech Yeast Pancakes)

Easy·15 min

Small, thick, fluffy yeast-risen pancakes fried in butter until golden, then topped with jam, quark, and a dusting of sugar. Softer and puffier than crepes, they are a classic Czech breakfast and sweet snack.

Lívance are an old Bohemian and Moravian home favorite, traditionally cooked in a special cast-iron pan with round hollows that gives them their characteristic shape. Distinct from the thin rolled palačinky, these yeast-leavened rounds belong to a Central European family of griddle cakes and were everyday comfort food in farmhouse kitchens. Topped with fruit preserves and sweet curd, they remain a cherished breakfast and afternoon treat.

Each little cake is golden and lightly crisp at the edge, soft and cloud-like within from the yeast rise. A spoon of tart jam and cool quark melts into the warm pancake, sweet and tangy in every soft bite.

Yeast fermentation produces carbon dioxide that gives lívance their thick, airy rise, far puffier than a chemically leavened pancake. Folding in whipped egg whites adds extra air, so the cakes stay tender and light rather than dense.

How it's made

8 steps · 15 min

  1. 1
    5 min

Warm the milk and dissolve the yeast with a pinch of sugar.

  2. 2
    5 min

Whisk in flour, egg yolks, and a little sugar to make a thick batter.

  3. 3
    45 min

Cover and let the batter rise until bubbly, about 45 minutes.

    Watch out

Let the batter go until the surface is domed with bubbles and it smells yeasty — that active foam is the only lift these pancakes get.

  4. 4
    5 min

Fold in stiffly whipped egg whites for extra lightness.

    Watch out

Fold the whites in with a light hand until just streak-free — deflate them and the cakes bake dense instead of airy.

  5. 5
    3 min

Heat a buttered pan or special lívanečník mold over medium heat.

  6. 6
    6 min

Spoon in rounds of batter and fry until golden underneath.

    Watch out

Ladle in and don't touch until the bottom is set golden and the top edges look dry — flip too early and the wet batter tears.

  7. 7
    5 min

Flip and cook the other side until puffed and cooked through.

  8. 8
    3 min

Stack and top with jam, quark, and a dusting of powdered sugar.
