Balkaimak is a Kazakh celebration sweet built entirely from the dairy wealth of the steppe (thick cream, butter) plus wild honey. Thick cream (kaimak) is boiled down with honey and butter until thick, golden and intensely rich, and served warm with baursak or bread for dipping. It is one of the purest expressions of the nomadic dairy tradition, where the herds' milk and the steppe's wild honey meet in a single luxurious sweet.

Thick, golden, intensely rich and honey-sweet, with a buttery, almost caramelised depth, the cream concentrated, the honey floral. Eaten warm, dipped with baursak, it is luxurious, sweet and the dairy luxury of the steppe.

Thick clotted cream (kaimak) is simmered with butter and honey, slowly reducing until the mixture thickens to a luxurious, golden, caramel-scented mass. The long simmer concentrates the cream and caramelises the honey slightly, deepening the flavour. The mixture is served warm, never cold (when it would set too hard), with baursak or fresh bread for dipping. The ratio of cream to honey determines the sweetness and the set.

Variations

A thicker version adds a little flour. Some add walnuts.
