Ovsyanaya Kasha

Central Russian·Easy·20 min active + 10 min resting

Russian oatmeal porridge — rolled oats cooked in milk with butter and salt. The most basic Russian breakfast.

Ovsyanaya kasha has been the standard Russian breakfast for centuries. Oats grow well in Russia's cool climate. The dish is so basic that 'kasha' (porridge) has become a generic Russian term for any grain cooked in liquid.

A bowl of warm, creamy, slightly thickened oatmeal. The butter gives it richness; the milk gives it sweetness. Simple, filling, and deeply warming on a cold morning.

Oats contain beta-glucan (a soluble fiber) that dissolves in hot liquid, creating the characteristic viscous, silky texture. The long cooking (15-20 min) fully hydrates the starches, making the porridge easy to digest.

Variations

Sweet: with honey, jam, fruit. Savory: with butter, salt, egg.

How it's made

5 steps · 20 min active + 10 min waiting

  1. 1
    5 min

Bring milk to a simmer with a pinch of salt.

    Watch out

Bring the milk just to a gentle simmer before the oats go in — a hard boil scorches milk and taints the whole pot.

  2. 2
    20 min

Add oats; cook 15-20 min, stirring.

    Watch out

Cook stirring until it thickens to a silky, spoon-coating porridge — that viscosity means the oat starch is fully hydrated.

  3. 3
    1 min

    Stir in butter.

  4. 4
    2 min

Sweet: add honey and berries. Savory: top with egg.

  5. 5
    1 min

    Serve hot.
