Soft, sweet yeast buns — Poland's most popular bakery item. Filled with fruit, poppy seeds, or custard, or simply glazed with crumb topping.

Drożdżówki belong to the Central European tradition of sweet yeast buns (German Hefeknoten, Czech droždí). The Polish version is distinguished by its variety of fillings — seasonal fruit (plums, apples, strawberries), poppy seed paste, or sweet cheese. They are the grab-and-go breakfast of choice for Poles.

A soft, pillowy bun, golden on top, pulling apart to reveal a fruity filling — perhaps plum or strawberry. The bread is warm, slightly sweet, with a tender crumb. The filling oozes slightly. Eaten with coffee or milk.

The dough is enriched with butter and egg (like brioche, but less rich). The yeast provides slow rise (1-2 hours), developing flavor. The filling must be pre-cooked (raw fruit would make the bottom soggy). The crumb topping (struesel) adds a textural contrast to the soft bread.

Variations

    Make enriched yeast dough: flour, warm milk, yeast, egg, butter, sugar, salt.

    Watch out

    The dough is ready when it's doubled and springs back slowly to a poked finger — under-proofed and the buns bake up dense.

    Watch out
