View page →

Walk into any Warsaw bar mleczny at noon and you'll see three things on the counter: kotlet schabowy under a heat lamp, rosół (chicken-and-noodle soup) being ladled out, and a glass case of pączki — rose-jam donuts so soft they collapse a little when you pick them up. Every menu has żurek, the sour rye soup with kielbasa and a halved egg, and barszcz czerwony, the beet broth that's red, clear, and a little vinegar-sharp. The country eats this every week.

Within Polish regional kitchens, Mazovia is the heartland — Warsaw at the center, the agricultural Mazovian plain around it. This is the cuisine that became 'Polish food' in foreign minds: pork-and-potato, soup-and-bread, sour cream where reasonable, fermented rye starter (zakwas) as the secret ingredient of half the soups. It's not subtle; it's the canonical Polish table, the one a young Pole moves abroad and immediately misses, and the one elderly Poles in Chicago kept making in 1965.

Pączki

Rose-jam donuts so soft they collapse — Fat Tuesday in Warsaw is built around them.

Why start here · Fat Tuesday in Warsaw is a national event built around eating these — try one to understand why.
