Kapuśniak is a Polish sauerkraut soup made with fermented cabbage, pork ribs, smoked sausage, and vegetables. The sauerkraut's lactic acidity flavors the entire pot, while the pork enriches the broth. A hearty winter staple across Poland.

Kapuśniak belongs to the broad Eastern European tradition of sauerkraut soups. Every country from Poland to Russia has its version. The Polish style typically includes smoked pork and dried mushrooms, distinguishing it from the Czech or Russian versions.
