Pan-frying is among the oldest and most universal of cooked techniques, as old as the first flat stones, clay comals and metal plates set over a fire and greased with a little fat. Nearly every cuisine keeps a flat cooking surface for it: the French poêle, the American cast-iron skillet, the Indian tava, the Mexican comal, and the North African griddle on which Tunisian mlaoui and mtabga — folded semolina flatbreads — are browned. From a Roman sartago to a diner griddle sizzling with eggs, the same simple idea recurs: a hot surface, a smear of fat, and food laid flat to take on colour and crust.
How It Works
A thin film of fat, typically held between 150 and 200°C, transmits heat by conduction from the pan into the single face of food resting on it, filling the surface's microscopic irregularities so contact is far more even than a dry pan allows. While the surface is still wet it stalls near 100°C as water evaporates; once it dries it climbs past ~150°C and the Maillard reaction between amino acids and reducing sugars builds hundreds of brown, savoury aroma compounds, joined above ~160°C by the caramelization of sugars. Because only the pan-side face is heated strongly, the food must be turned to brown both sides while conduction carries heat inward to cook the centre. The fat both buffers the temperature (capped by its smoke point) and carries flavour, and a protein crust will not release from the metal until it has set — which is why food freed too early tears and sticks.
In Practice
the craftChoose a fat by smoke point and flavour — clarified butter or ghee, neutral oil, olive oil or lard — since whole butter alone scorches; many cooks blend butter with oil for browning without burning. Heat the pan first, add the fat, and wait until it shimmers (around 170–180°C) before laying in food patted dry, so it browns rather than steams. Leave breathing room: crowding drops the pan below the browning threshold and the food stews in its own juices. Turn only when the underside is well coloured and releases cleanly. Failure modes: a pan too cool leaves food greasy, pale and stuck; too hot, or butter used alone, burns the surface before the centre is done; a crowded or wet surface steams instead of searing; flipping too soon tears the crust.

No one invented pan-frying; it emerged wherever cooks had a fireproof flat surface and a source of fat, and it appears across the ancient world — the Romans called the pan a sartago, and griddle-baked flatbreads predate written history. The browning chemistry at its heart was described by the French chemist Louis-Camille Maillard in 1912 and later mapped in detail by food scientists such as Harold McGee, whose *On Food and Cooking* (1984) explained to general cooks why a dry surface, a hot pan and enough space produce a seared crust rather than a grey steam.

Deep frying is the submerged sibling, surrounding food in fat instead of resting it on a filmed pan. Pan-searing is simply pan-frying pushed hot to chase a crust, while griddling on a comal or tava is its flat-plate form for flatbreads and pancakes; stir frying carries the same fat-as-conductor logic to the wok at ferocious heat.
