Brinjal Curry is a Sri Lankan eggplant curry — eggplant pieces first fried until soft and golden, then simmered in a coconut milk gravy with Sri Lankan roasted curry powder, curry leaves, and pandan. Different from Brinjal Pahi (already in the database, which is a sweet-sour pickle), this is a proper curry — the most common vegetable curry on the Sri Lankan table.

Brinjal Curry (wambatu curry in Sinhala) is one of the most common everyday curries in Sri Lanka. Unlike Brinjal Pahi (already in the database, which is a sweet-sour pickle/relish), this is a proper curry — the eggplant is first fried until soft and golden (which intensifies its flavor and prevents it from going mushy in the curry), then simmered in a coconut milk gravy with roasted curry powder. Every Sri Lankan household makes this; it is the default vegetable curry when you want something rich and satisfying.
