Fish Curry Jaffna

Tamil Sri Lankan·Medium·30 min active + 30 min resting

Jaffna Fish Curry is the fiery, intensely spiced fish curry of Sri Lanka's Tamil north — fish simmered in a tamarind-rich, dark gravy with Jaffna-style roasted curry powder, which is darker and more pungent than the Sinhalese version. It is the defining dish of Jaffna Tamil cuisine, hotter and more sour than any other Sri Lankan fish curry.

Jaffna Fish Curry is the defining dish of Jaffna Tamil cuisine — the cooking tradition of Sri Lanka's northern peninsula. Jaffna Tamil cuisine is distinct from Sinhalese Sri Lankan cuisine: it is hotter (more chili), more sour (more tamarind), and uses a darker, more intensely roasted curry powder (Jaffna curry powder, which includes more coriander and fenugreek). The fish (often seer fish, tuna, or prawns) is simmered in this dark, tamarind-rich gravy until the sauce reduces to a thick, intensely flavored coating. Jaffna cuisine is considered the spiciest in Sri Lanka.

A bowl of dark, thick, intensely flavored fish curry — the gravy is dark brown, almost black, with a powerful tamarind sourness and a slow, building heat from the roasted curry powder. The fish is firm and has absorbed the intense flavors. It is not for the faint of heart — it is the spiciest, most intense curry in Sri Lanka.

The Jaffna curry powder is the key — it is roasted longer and darker than Sinhalese curry powder, with more coriander, fenugreek, and black pepper. The tamarind provides the sourness (more than in Sinhalese curries). The gravy is reduced until thick (not soupy like some Sinhalese curries). The fish is added late and cooked briefly (overcooking makes it tough).

Variations

Some use different fish; some add coconut milk for richness; some use dried fish; the heat level varies (but always spicy).

How it's made

9 steps · 30 min active + 30 min waiting

  1. 1
    8 min

Make Jaffna curry powder: dry-roast 3 tbsp coriander seeds, 1 tbsp cumin, 1 tsp fenugreek, 1 tsp black pepper, 1 tsp fennel, and 4 dried red chilies until dark; grind to a powder.

    Watch out

Dry-roast the spices until they darken well and smell deeply nutty — the Jaffna blend is meant to go dark; that deep roast is its signature, but stop before it smokes black and bitters.

  2. 2
    3 min

In a pot, heat 2 tbsp coconut oil; add 1 tsp mustard seeds, 10 curry leaves, and 1 pandan leaf.

  3. 3
    5 min

Add 1 diced onion and 4 minced garlic cloves; cook 5 minutes.

  4. 4
    2 min

Add 2 tbsp Jaffna curry powder, 1 tsp turmeric, and 1 tsp chili powder.

  5. 5
    3 min

Add 2 tbsp tamarind paste (dissolved in 100 ml water).

  6. 6
    5 min

Add 200 ml coconut milk and 100 ml water; simmer 5 minutes.

  7. 7
    12 min

Add 600 g fish pieces; simmer 12 minutes until fish is cooked.

    Watch out

Add the fish late and simmer briefly — pull it when the flesh just turns opaque and flakes; over twelve minutes and it toughens.

  8. 8
    1 min

The gravy should be thick and dark.

    Watch out

Reduce until the gravy turns thick and dark and clings — a thin, watery curry means it needs a few more minutes; Jaffna gravy is meant to be dense.

  9. 9
    1 min

    Serve with rice or roti.
