Bitochki (from 'byt' = 'to be' or 'bit' = 'to beat') are a traditional Russian home dish. The addition of soaked bread stretches the meat (economics) while making the patties softer (the bread's starches absorb moisture and prevent the meat from becoming dense). They are the humbler cousin of kotlety.
Tender, juicy meat patties in a creamy white sauce. The meat is soft (thanks to the bread filler); the sour cream sauce is tangy and rich. Eaten with mashed potatoes or buckwheat.
Soaked bread acts as a moisture retainer — its starches hold water during cooking, preventing the meat from drying out. The bread also lightens the texture (pure ground meat is dense). The sour cream sauce's lactic acid tenderizes the meat further during the brief simmer.
