Duck with apples is a Polish festive tradition — Christmas, Easter, and Sunday family dinners. Poland has a long duck-farming tradition (especially the Aksaray and Pekin breeds). The combination of duck fat with tart apples is a Central European classic.

The duck's fat renders during the long, slow roast (2+ hours at 160°C), basting the meat from inside and out. The apples inside the cavity absorb this rendered fat, becoming a savory-sweet purée. The skin crisps because the rendered fat has left the skin layer, leaving behind dehydrated collagen that crackles.

Variations

Some add prunes or oranges to the cavity; served with buckwheat or potatoes.

    Season duck inside and out with salt, pepper, marjoram, garlic.

    Watch out

    Baste every so often through the long roast — the rendered fat pooling in the pan is what keeps the breast from drying; if the drippings scorch, add a splash of water.

    Crank the heat only at the end — the skin is ready when it darkens to mahogany and crackles under a tap; too early and the fat hasn't rendered out yet.
