Cuban café con leche — strong espresso-style coffee mixed with steamed milk and sugar. The Cuban morning ritual, served in a small cup alongside pastelitos or pan Cubano.

Café con leche is Cuba's morning ritual, inherited from Spanish colonial tradition. Cuban coffee (Café Cubano, Café Bustelo) is a dark roast, finely ground, brewed strong in a moka pot. The sugar is whipped with the first few drops of coffee into a foam (espumita) before adding the milk.

A small cup of warm, sweet, milky coffee — the coffee flavor is strong but tamed by the milk; the sweetness is unapologetic. The espumita (foam) on top is the Cuban signature. Drunk in two or three sips.

The espumita technique — whipping sugar with the first few drops of concentrated coffee — creates a stable foam through protein denaturation (the coffee's acids and heat alter the sugar's crystal structure, creating a thick syrup that traps air bubbles).

Variations

The coffee-to-milk ratio varies (more milk for children); some use evaporated milk.
