Phu Quoc island anchovy fish sauce, wood-barrel fermented 12+ months, mahogany-amber, 30-43°N protein. EU PDO since 2013.

Phu Quoc island, Gulf of Thailand, where the cá cơm (Stolephorus) anchovy run feeds the fishery from July to October. Industrial-scale fermentation since the 1850s; 87 family producers held the EU PDO when it was granted in 2013, the first Vietnamese product to receive it.

PDO rules require Stolephorus anchovy caught in Phu Quoc waters, salted on the boat within hours, and fermented on the island in wood vats — none of the three may be relocated. Top-grade nhi cốt measures 40-43°N (grams nitrogen per liter); supermarket nước mắm is usually 25-30°N and often blended with Thai or factory sauce.

Mahogany-amber, almost black at the bottle's neck. Smell hits hot-cheesy then settles into nut and caramel. Tastes salt-forward but with a long sweet tail — the high free-amino-acid load reads as umami, not just brine. First-pressing nhi cốt is sipped from a teaspoon by old Phu Quoc tasters.

Anchovies layered with sea salt 3:1 in a 12-15 ton wooden vat (thùng chượp) made from boi loi or hong dao wood, then weighted and tapped through bamboo. Enzymes from the fish gut autolyze protein for 12-15 months at 28-32°C. The first draw (nước mắm nhi) is bottled neat; later draws are blended down for grade.

Variations

Nhi cốt (first-draw, 40-43°N, sipped neat); thượng hạng (premium, 35°N+); loại 1/2/3 (later draws, 25-35°N). Brand benchmarks: Khải Hoàn, Thịnh Phát, Hưng Thành. Phan Thiết and Nha Trang make mainland versions outside the PDO — bolder, less sweet.

    Watch out

    Layer the anchovies and salt at three-to-one, salt on top — skimp on salt and the vat rots instead of ferments.

    Watch out

    Draw the first tap slow and clear — that clean amber trickle is the nuoc mam nhi, the top grade; the later cloudy draws are lesser.
