Mentioned in Manasollasa (1130 CE) as purika. Temple-offering bread for centuries — Jagannath Temple in Puri, Odisha has served puri-as-prasad since the 12th century. The breakfast pairing puri-aloo is North Indian Brahmin staple.
A puri that fails to puff is overworked dough — gluten too tight to expand. Test by rolling: if the disk shrinks back, rest 10 minutes. The dough has zero fat in the orthodox version; tablespoon-of-oil shortcuts produce a denser, less crisp puri.
Hollow inflated disk, 12cm, crisp golden shell with a steam-soft interior wall. Plain whole-wheat flavor — no salt or seasoning in dough. Tears at one edge, releases steam, then scoops aloo sabzi or kheer. Soggy in 4 minutes, eat fast.
Stiff low-hydration atta dough (50-55%) — too soft and the puri won't hold gas. Rolled to 2mm uniformly: any thick spot stays raw, any thin spot ruptures. Oil at 190°C, briefly press the disk under with a slotted spoon to force the puff in 5 seconds. Flip, drain.
Variations
Pani puri / golgappa — smaller (4cm), filled with spiced tamarind water and chickpeas, Mumbai and Kolkata street food. Bhature-puri is Delhi-Punjab maida fried bread, fluffier. Luchi is the Bengali maida puri, whiter, served with cholar dal at weddings.
