Pork-head meat aspic clarified with bay and garlic, set in shallow dishes. Holiday cold-table fixture, eaten with horseradish and mustard.

Pre-refrigeration winter preservation method — pork head and trotters yield enough natural gelatin to set without added agar or sheets. Documented in 1798 Eneida by Ivan Kotliarevsky as a Cossack feast dish, listed among the foods Aeneas's Trojans encounter in disguised-Ukrainian form.

Lviv ethnographer Volodymyr Hnatiuk's 1903 Hutsulshchyna survey records each peasant household setting two or three studenets dishes for Christmas — one for guests, one for the family, one for visiting carolers (kolyadnyky).

Transparent amber-pale jelly with shredded pork suspended in it, like a meat terrine but cold-set and shimmering. Cut into squares with a wet knife. Eaten with sharp horseradish-vinegar (khrin) or yellow mustard. Wobbles but holds the slice.

The head and trotters simmer 6 to 8 hours at sub-boil — vigorous boiling clouds the broth. Skim every 30 minutes for the first two hours. The broth must pass the cold-spoon-test (jells in 30 seconds on a chilled spoon) before pouring into setting dishes.

Variations

Poltava version includes cooked carrot rounds and parsley sprigs set decoratively in the jelly. Hutsul mountain version uses pork plus rooster feet for extra gelatin. Western Galician kitchens add a thin slice of hard-boiled egg in each square.

    Simmer 2 split pork heads with 6 bay leaves, peppercorns, garlic 6 hr until meat falls off.

    Watch out

    Hold it at a bare sub-boil — just the odd bubble breaking, never a rolling boil — and skim the scum often; hard boiling clouds the broth and this must set crystal-clear.

    Shred meat; strain broth; salt to taste; add 6 minced garlic.

    Watch out

    Strain the broth through fine cloth until it runs clean — any bits left in will cloud the set jelly and muddy each slice.

    Pour shredded meat + clarified broth into shallow dishes.

    Watch out

    Chill until fully set — test a chilled spoonful; it should jell in about half a minute. If it stays runny, the broth wasn't concentrated enough and needs longer cooking.
