Santander/Norte de Santander mountain stew that consolidates whatever proteins, grains, and roots a household has; widely held to be a hybrid of indigenous corn soups and the medieval Spanish-Jewish chickpea cocido 'adafina', which accounts for the otherwise-unusual chickpea — name is from Quechua mut'i (boiled corn). Documented in Santander cookbook traditions since the 1880s. Each household varies the meat mix; the corn-and-chickpea constant is non-negotiable.
Santander municipal records list mute among the patrimonial dishes preserved by the 2019 Plan Especial de Salvaguardia. Bucaramanga's El Viejo Chiflas (since 1958) is the standard reference. Mute and cabrito are the two pillars of Santanderean cuisine.
Pale-yellow thick broth, hominy kernels giving the texture, chickpea-and-bean making it soup-substantial. Pork, tripe, and bone-meat all in the same spoonful. Dense — half a bowl fills you. Cilantro and scallion oil added at table.
Hominy and chickpea soak 12 hours separately, then cook 4 hours with bone and ribs to gelatinize and thicken broth. Tripe goes in only the last 90 min (pre-boiled separately to clean). Adding everything at once gives a flat-textured pot.
Variations
Mute santandereano: chickpea + hominy + tripe + ribs. Mute boyacense (Boyacá): adds arracacha root, replaces chickpea with white beans entirely. Mute pastuso (Nariño): smaller portion, more vegetables, urban version.
