Friche (also frishe, frichi) is the defining dish of the Wayuu indigenous people of La Guajira, the northernmost department of Colombia. Goat meat and offal (asadura) are cooked with the animal's own juices and blood, then fried in its rendered fat. Traditionally seasoned only with salt, modern versions add onion, garlic and cilantro. Friche is central to Wayuu feasts, celebrations and funerary rites, and is a dish without parallel in other regions of Colombia.
Intensely goat-flavoured, the meat dark and fibrous, the offal giving depth and a faintly metallic richness, the whole fry concentrated and savory. Eaten by hand with arepa, it is austere, primal and unmistakably Wayuu.
The dish is a two-stage self-basting cook. First, the goat meat, offal and blood are placed in a pot with no added fat and cooked in their own juices until the liquid reduces and the fat renders out. Then the meat is fried in that same rendered fat until it colours and concentrates. No external fat or liquid is used; the animal cooks entirely in itself.
Variations
Modern versions add sofrito of onion, garlic and cilantro. A coastal variant mixes in bitter orange juice.

From one goat (about 4kg usable meat and offal), cut the meat and asadura (liver, heart, lungs) into chunks; collect 250ml of fresh blood.

Place the meat, offal and blood in a heavy pot with 1 tbsp salt and no fat; cover and cook over low heat 90 minutes, stirring occasionally, until the juices release and reduce.

As the liquid cooks down, the goat's own fat will render; continue cooking uncovered another 45 minutes so the meat begins to fry in that fat.
Watch outOnce the liquid's gone, keep frying uncovered so the meat cooks in its own rendered fat until dark and concentrated — this second stage is where the flavor deepens.

Add 1 chopped onion, 4 cloves crushed garlic and a handful of chopped cilantro; fry 15 minutes more until the meat is dark and concentrated.
